  • 1 tablespoon extra virgin coconut oil
  • 1/2 cup Nature’s Greens® Kale 
  • 1/2 teaspoon fresh grated ginger
  • 3 tablespoons honey, divided
  • 1 whole avocado, pit and skin removed
  • 1/3 cup raw, non-dutched cocoa powder
  • 1/2 cup unsweetened coconut milk
  • 2 teaspoons vanilla extract

In a small bowl combine coconut oil, kale, ginger, and one tablespoon of honey. Stir to coat kale evenly and set aside at room temperature. Place remaining ingredients in blender or food processor and blend until smooth. Layer kale with pudding mixture, and serve.
