- 1 cup mashed baked sweet potato, no skin
- 2 large beaten eggs
- 1/3 cup unsweetened coconut milk
- 1 tablespoon virgin coconut oil
- 1 1/2 tablespoons pure maple syrup
- 2 teaspoons pure vanilla extract
- 1 teaspoon pumpkin pie spice
- 1 cup Nature’s Greens® Kale
Preheat the oven to 450 F. In a medium bowl combine all ingredients except the kale and pumpkin spice. Stir to combine thoroughly, and then fold in kale. Transfer to small casserole dish and bake in a pre-heated oven for 35 minutes. Remove from oven, and serve warm or chilled.
