- 1/2 cup quinoa
- 2 cups water
- Olive oil, as a dressing
- 2 cups WP Rawl Farms® Turnip Greens
- 1/4 cup fresh mint, chopped
- 10 cherry tomatoes, halved
- 1 small cucumber, diced small
- 1 lemon, squeezed
- 1/2 teaspoon garlic powder
- 3/4 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried parsley
- 1 cup broccoli sprouts
- Rinse the quinoa in a fine mesh colander under running water & drain.
- In a small pot, combine water and quinoa & bring to a boil.
- Decrease the heat, cover, and let simmer for 15-20 minutes to allow all water to be absorbed. Remove from heat.
- Meanwhile, chop turnip greens, mint, cucumber, & tomatoes.
- Fluff the quinoa with a fork and combine with veggies in a bowl. Add garlic powder, salt, pepper, parsley, & lemon juice. Mix well.
- Drizzle olive oil over the top. Add more to individual bowls as preferred.
