  • 12 ounces of Nature’s Greens® Kale Greens
  • 2 tablespoons olive oil
  • 1/2 cup Italian Dressing
  • 1 cucumber, sliced
  • 2 cups grape tomatoes, sliced
  • 1/2 cup kalamata olives, pitted
  • 1/2 of a purple onion, thinly sliced
  • 1/4 cup crumbled feta
  • 2 cups cooked, quinoa
  • Salt/pepper to taste
  • 2 cups cooked quinoa
  1. Add 2 tablespoons of olive oil to a large bowl. Add in kale massage the kale in handfuls, between your fingers, for about 2-3 minutes, or until the leaves soften and darken in color.
  2. Toss in the sliced cucumbers, grape tomatoes, kalamata olives, purple onions, crumbled feta and Italian Dressing. Add salt/pepper to taste.
  3. Scoop quinoa on top of salad, and top with additional feta, if desired. Enjoy!
