- 12 ounces of Nature’s Greens® Kale Greens
- 2 tablespoons olive oil
- 1/2 cup Italian Dressing
- 1 cucumber, sliced
- 2 cups grape tomatoes, sliced
- 1/2 cup kalamata olives, pitted
- 1/2 of a purple onion, thinly sliced
- 1/4 cup crumbled feta
- 2 cups cooked, quinoa
- Salt/pepper to taste
- 2 cups cooked quinoa
- Add 2 tablespoons of olive oil to a large bowl. Add in kale massage the kale in handfuls, between your fingers, for about 2-3 minutes, or until the leaves soften and darken in color.
- Toss in the sliced cucumbers, grape tomatoes, kalamata olives, purple onions, crumbled feta and Italian Dressing. Add salt/pepper to taste.
- Scoop quinoa on top of salad, and top with additional feta, if desired. Enjoy!
