Preheat the oven to 350 degrees Fahrenheit . To prepare the corn, cut off the excess corn silk at the top of the ears and remove any loose pieces of husks. Place the corn directly on the oven racks making sure the ears are evenly spaced. Bake for 35 minutes, rotating halfway through.
While the corn is baking, combine the cheese, mayonnaise, sour cream, chili powder, cilantro, & garlic in a bowl and mix until cohesive. Set aside.
Remove the corn from the oven and allow it to cool for 10 minutes before peeling off the husks. Slather the corn in the cheese mayo mixture. Topping with more crumbled cotija, cilantro, and a squeeze of lime. Serve immediately.
