What You Need

  • 2 large eggs
  • 2 tablespoons Extra Virgin Olive Oil, plus more for serving
  • 1 clove garlic, thinly sliced
  • 2 cups packed Nature’s Greens® Greens Trio
  • Kosher salt and freshly ground pepper
  • Juice of half a lemon, divided
  • 1 avocado, pitted and peeled
  • 2 slices sourdough or other crusty bread
  • Everything bagel seasoning

What You Do

  1. Remove eggs from the refrigerator and fill a large bowl with ice water.
  2. Bring a medium, covered saucepan of water to a boil over medium-high heat. Gently lower in eggs, one by one, and boil uncovered 7-9 minutes (7 minutes for a truly soft boiled, jammy egg; 9 minutes for a firmer yolk). Remove eggs with a slotted spoon and plunge into the ice bath.
  3. Add 2 tablespoons oil to a medium frying pan set over medium-low heat. Add garlic and stir until lightly browned and fragrant, about 1 minute. Add greens and season lightly with salt and pepper. Cook until just wilted, 2-3 minutes. Squeeze half of the lime juice over the greens and toss. Remove pan from the heat.
  4. In a small bowl, mash avocado, salt, pepper and remaining lemon juice with a fork until creamy but still a bit chunky.
  5. Toast sourdough to your liking and assemble: top toasts with a spoonful of mashed avocado, sautéed greens and a torn soft-boiled egg. Finish with a drizzle of olive oil, salt, if needed, and a generous sprinkle of everything bagel seasoning.
