1. Rinse and drain chickpeas. Place on a baking sheet, cover with 1 teaspoon olive oil and any desired spices, and bake at 400F for 20 min.
2. Pour 1 tablespoon of olive oil on kale and massage (knead like bread) until kale turns dark green. Toss any ribs/stems.
3. Cut up sweet potato into bite sized pieces. Cook in a pan on low-medium heat for 10 min.
4. Cut avocado into chunks and cook rice pouch.
5. Blend all the dressing ingredients in a blender.
6. Combine everything once cooked, toss in dressing, and enjoy!
