Toasted Almond and Broccoli Salad

What You Need

  • 1/3 cup almonds, sliced
  • 1 cup tahini
  • 1 tablespoon sugar
  • 2 tablespoons cider vinegar
  • 12 ounces Versatile Veggies Broccoli Florets
  • 2 ounces Versatile Veggies Diced Red Onions
  • 1/3 cup dried cranberries
 

What You Do

Heat oven to 350 F. Place almonds in a shallow pan and bake for 6-8 minutes or until lightly toasted, stirring occasionally. Stir tahini, sugar, and vinegar together in a large bowl. Add broccoli, onion, and cranberries, tossing gently to coat. Cover and chill for 2 hours. Sprinkle with toasted almonds just before serving.
